Shepherd's Pie

1 pound Ground Beef
1 onion chopped
dash of salt
dash of pepper

Combine in Skillet and cook until meat is done.

Add:
1 can green beans drained
1 can tomato soup
Pour into glass pie dish or double recipe and pour into a 9x13 pan)
Top with mashed potatoes (this dinner is REALLY FAST if you have left over mashed potatoes from Sunday Dinner)
Sprinkle potatoes with Parmesan cheese

Bake 350 for 25 minutes. Serves 6, doubled serves 12

  1. I've also done something similar with ground lamb, a little garlic for kick. I think that is the original meat in Shepherds Pie, and it is a nice flavor. Also, peas works instead of the green beens, if your kids prefer that.
